Reflecting Dr. King’s belief that we need to eat local and indigenous foods that also possess a deep connection to our prehistoric roots, elk are part of our farm. The largest species within the deer family, elk meat is low in fat and cholesterol yet high in protein and omega-3s.
In 2015, we received the first license in decades to raise elk in North Carolina. Our goal is to continue to grow the herd for meat and to study the growth factors contained in the velvet of elk antlers. The growth factors in the velvet could prove to be beneficial for human healing, anti-aging and strengthening.
We sell meat from our farm in Leicester, North Carolina, and from other elk farmers who meet our stringent standards of purity.
